Unless I’m baking, I don’t ever measure anything. I just add a little of this, a lot of that, maybe some more of this. So it’s kind of difficult when my friends or family ask me how I make something. Take my shrimp scampi, for instance. It packs a lot of flavor, looks amazing but takes less than 10 minutes to make. Seriously.
First I heat the pan with about 2 tablespoons of olive oil (maybe more, maybe less…remember I just don’t measure anything!), add peeled shrimp and cook for a few minutes. Then I add fresh, minced garlic, cracked pepper, parsley, lemon juice and put on medium high until shrimp is pink. I turn off the heat and immediately add a few tablespoons of butter.
Aaaaannnnd that’s it. It looks hard to make, but people don’t have to know it took less than 10 minutes to make! Serve with rice or your choice of pasta.
