Quick Salmon Parmesan Omelette

So this is what I’m having for breakfast today. Leftover salmon sauteed quickly, two beaten eggs, then placed in a 350 degree oven for a few minutes. When it looks done, I add fresh shaved parmesan cheese until melted. So easy!
